Tasting Notes: The Damiano Ciolli Botte 22 Bianco is a blend of 70 % Trebbian Verde and 30 % Ottonese, two white indigenous grapes from Olevano Romano, grown in two vineyard blocks planted in different periods and trained in a traditional way. Harvest occurs manually when the grapes are perfectly ripe. The only white wine made by famed Cesanese producer Damiano Ciolli ‘Botte Ventidue’ was named after that foudre, numbered 22 in the cellar. Grapes are first destemmed-crushed then fermentation occurs naturally in foudre vats and will continue to age for 11 months in contact with gross lees. Before bottling, the wine is racked into concrete vat to age for one more month. This is a full bodied white wine with notes of ripe peach, honey and vanilla balanced by a backbone of fresh saline acidity.
